    • ¾ cup pistachios
    • 2½ cups rolled oats
    • ¾ cup whole-wheat flour
    • ¾ cup dried cherries
    • ¾ cup dark chocolate chips/chunks
    • ¼ cup packed dark brown sugar
    • 1 teaspoon ground cinnamon
    • 1 teaspoon sea salt
    • ¼ cup honey
    • ¼ cup maple syrup
    • ¼ cup applesauce
    • ½ cup coconut oil, melted
    • 1 egg, beaten

    Here’s how to make them:

    1. Preheat the oven to 350°F and generously spray a 9-by-13-inch baking pan with cooking spray.
    2. On another baking sheet, scatter the pistachios and bake for 10 to 15 minutes until fragrant and golden brown. Let cool slightly.
    3. In a large bowl, mix the oats, flour, dried cherries, pistachios, chocolate chips, brown sugar, cinnamon, and sea salt.
    4. Add the honey, maple syrup, applesauce, coconut oil, and egg, and mix until all ingredients are well incorporated.
    5. Pour the oat mixture into the baking pan and pat down the mixture with the back of a spoon or your hand until it’s firmly and evenly spread.
    6. Bake for 25 to 30 minutes, or until the bars begin to turn a golden brown.
    7. Cool for 15 minutes in the pan, then cut into bars while still somewhat warm. Once cut, let the bars cool completely. They tend to be even better the next day.
